Seriously good stuff! Make anyone worship the ground you walk upon with this offering for breakfast! It’s such a treat for breakfast giving the normal banana bread a beautiful tropical twist, making it perfect for summer when you have nice sweet mangoes in abundance.  It’s pretty quick to put together and extremely tasty. You may or may not want to add the sultanas but if you don’t, I would still add a little dark rum in as it gives a great flavor. I would leave this recipe as is, it’s pretty perfect!
125 ml melted butter
150 grams sugar
1 tsp vanilla extract
1 tsp cinnamon powder
175 grams plain flour ( I used 75 grams whole wheat flour and 100 grams plain flour)
1/2 tsp salt
2 tsp baking powder
1/2 tsp bicarbonate of soda
2 mashed bananas
1 mango diced
1/2 cup shredded coconut
1/2 cup chopped walnuts or pecans
75 ml dark rum
50 grams sultanas
Preheat oven to 325 F or 170 C.
Place the sultanas in the rum in a bowl and microwave for a minute, let the sultanas sit in the rum till they soak up most of it.
Mix the melted butter and sugar in a large bowl with a wooden spoon. Add one egg at a time and mix well. Add the vanilla and the cinnamon powder. Mix till combined. Now add the mashed banana, the pecans, the sultanas and the coconut.
Add the flour 1/3 at a time and mix well. Now add the chopped mango and gently mix together.
Pour the batter into the prepared loaf tin and bake in the oven for an hour or till a knife or skewer comes out clean.
